Took about 5 weeks to get it carbed up. If your impatient then you could put in another yeast at bottling time. WLP530 is a nice yeast. Have used many times. Throws a huge krausen on ocassion. Used by westmalle, Westvleteren and Achel but at different pitch rates and different temperatures so they all taste slightly different Cheers for that mate. I'll be leaving it 5 weeks, no rush. Maybe a light sheet would do it.

The brew is in the laundry, so does not get any direct sunlight. I will be watching the temp. like a hawk; ready to add fleecy coats, or wet towels and fans - whatever is required. And I forgot to say I added 1 packet of Coopers BE No.2 and the yeast that comes with the 'gloop tin'.

A small tip, works for me, I put the Brew Enhancer in the FV first & any Dried Malt you may or may not add & mix it thoroughly in cold water, then add the 1.7 Can of extract rinsing it with first hot water & then cold until it is clean, make sure to get a good swirl going being careful not to scratch the bottom & sides of the FV, by mixing really well I strongly believe this leads to better head retention.

And while I'm here, I've got a question: the sludge at the bottom of the FV started appearing within two hours of the brew starting. Is that normal? This morning there is a 'good' crust on top of the brew; and if I stare at it long enough I can see big bubbles bursting!

That is perfectly normal to see its just the trube starting to form also known as the yeast cake and seinmg krust on top is a good thing as this is the krausen and usually happens during fermentation and as the fermentation ceases so will the krausen will start to slowly decrease

Good hops to try with English bitter (for next time) are Fuggles, East Kent Goldings, and Brambling Cross - if you like the traditional flavors. Be interested to hear how yours turns out

I don't use an air lock but leave the lid a little loose. It all got dangerously close to the lid and then escaped all over the FV and the fridge it was in. Of course I waited with the cleanup until the beer was finished and then spent 2 hours scrubbing the dried up stinky liquid from the fridge. It wasn't pretty. Kids must be to big Now You're both right fellas: they do look like cows' udders, and they were for the kiddies. And they are too big now....For the first kid you get all the fancy sh*t from the specialist shops and for the second, anything that can't be passed down, it's just f"*k it, let's go to IKEA... But now they are handy for the FVs as they're off the ground. 2

I've sanitised another airlock and put it in. I might sanitise a different lid and change it, although I wouldn't normally open a brew once started, I suppose it's the equivalent of opening it to dry hop it. You don't get krausen collars on the FVs here (don't get all of Coopers' products). Greeny mentioned this yeast was a lively bugger: it certainly is ! 1

Can you not incorporate a simple blow off tube down into a bucket of sanitiser instead of the air-locks?
