Absolutely, and it's a combo of pork mince I made from (butchers quality -  neck or shoulder) and my own mince beef (rump) so I'm happy to have it rare.

Compared to that heavenly offering I had to do with something from the shop… Your stuff looks wonderful 😉

Great looking snags Mick, I guess they are Hog casings, do you buy them locally?

Yes they are hog casings. I get them from a company online, from memory same place as our resident expert Salumi aficionado  @beach_life gets his from.

The Casing Boutique - packaged in NZ. They are the best I've tried.

That meat looks pretty good mate especially with the mustard, it is a ready-made meal which is convenient, but I am not big on sauerkraut & I believe some have offal in them. I will stick to just the meat.

Offal in sauerkraut??  how does that come about when all it is , is pickled cabbage?
