I only had 2.5 hours and reckoned it would be safer at 55. Ideally I would have done 4 hours at 53 but I didn’t have the time. It wasn’t ruined like a t-bone I did the other day

stquinto
A bit of fish for a change. Same recipe admittedly, but it’s popular enough. The kids prefer salmon, which goes black with the soy sauce/balsamic marinade

The Oyster Bar at Glenelg Marina use Coffin Bay Oysters & I would put them on par with anywhere else. I can be there in 5 minutes from my place. Just spent a week down at Port Fairy VIC and there is a guy there that sells Coffin Bay oysters and those went down well with a squeeze of lemon. A bit pricey at $29 a dozen but a nice treat all the same. Tasmanian oysters are just as good IMO. The same guy also sells fresh caught local lobsters out of the back of his boat, you pick your live lobster out, he weighs it and then he boils it while you wait. Absolutely superb eating.

I pick up 10 dozen for ten bucks a dozen, picked from the basket that day. Its pure bliss shucking and eating them natural. They showcase oysters beautifully. A little expensive but you get what you pay for.

You can always tell when I'm on the tools in the kitchen M Dubbya @Malter White, the standard drops considerably. Whilst the chook was not my effort, I'll give you a sample here so that you can easily identify when I've been in the kitchen. I think there's a trend.
