I did a bit - I set it to 55C instead of my normal 53. I only had 2.5 hours and reckoned it would be safer at 55. Ideally I would have done 4 hours at 53 but I didn’t have the time.

It wasn’t ruined like a t-bone I did the other day 😳

I do understand, we had a Butcher in the family & as a kid I used to take interest in the art of sausage making, some of them I wouldn't eat as I have seen what goes into them.

Fresh oysters with a drop of lemon are one of my favourite things on Earth. Here in South Australia I believe we have the best oysters in the world.

 I agree with you on that, I have had Cowell/Coffin Bay/Port Lincoln/Smokey Bay etc ... The Oyster Bar at Glenelg Marina use Coffin Bay Oysters & I would put them on par with anywhere else.

I can be there in 5 minutes from my place.

Yep, me too @Pale Man.  Just spent a week down at Port Fairy VIC and there is a guy there that sells Coffin Bay oysters and those went down well with a squeeze of lemon.  A bit pricey at $29 a dozen but a nice treat all the same.  Tasmanian oysters are just as good IMO.  The same guy also sells fresh caught local lobsters out of the back of his boat, you pick your live lobster out, he weighs it and then he boils it while you wait.  Absolutely superb eating.

Ive gotten to know the manager of a Cowell Farm. I pick up 10 dozen for ten bucks a dozen, picked from the basket that day.

Its pure bliss shucking and eating them natural. My eyes roll back into my head.

Me and Mrs Paley have been to the Oyster Bar. They showcase oysters beautifully. A little expensive but you get what you pay for.

Is the wife away? Not the usual exotic, spicy dishes we see from you, Mick. Still looks the good though.

You can always tell when I'm on the tools in the kitchen M Dubbya @Malter White, the standard drops considerably. Whilst the chook was not my effort, I'll give you a sample here so that you can easily identify when I've been in the kitchen.

I think there's a trend. 🤣
