BREW DAY!! WATCHA’ GOT, EH? 2022

Real ale, 1kg DME

350 wheat, 150 crystal malt 

30g local hops Southern Sublime infusion with boiled kettle water

Notty and kit yeast to 23L

Will dry hop with some left over Centennial and the Southern Sublime (prob 30g of each)

Looks like a nice drop, be sure to get every last bit of goodness out of that tin.

Bottling Stout Day at Classic Brewing Co

I have beer in a keg but still bottling 😬 but more kegs are on the way, I prefer to age stout in bottles anyway, ended up with 32 Cooper's Longnecks of the lovely black stuff.

Whether or not it gets to age 🤣 doesn't matter, it's all boxed anyway.

Time for a...

Kiwi Porter!

A 20 litre partial mash:

  • 1.5kg LME
  • 1kg GF Ale Malt
  • 400g Carafa 1
  • 200g Flaked Barley
  • 250g Caramelised sugar
  • 30g Waimea @45mins
  • 25g Wai-iti @5mins
  • 25g Wakatu Steep
  • Kveik Voss @38ºC 

Didn't quite reach the intended OG of 1.046, but near enough!

No.  I make a concentrated wort -  not unlike some of those FWK you can buy which are 15 litres of concentrated - or at least partially concentrated worts.   In the case of these partials I do it's probably around 8 litres that I end up boiling.  Toward the end of the boil I mix in the extract.  It's then made up to the final 20 litres in the fermenter with the addition of cold water.  When I'm doing a stove top AG I'm probably boiling more around 12 litres of concentrated wort, which similarly is made up to the final volume in the FV with the approriate amount of cold water.    🤓

Only saw this message now Toner mate. The local hops are great. Not as punchy as the American ones but not far off. And really cheap, about half the price. I have 3 different varieties I cN get at my local HBS.  One in particular has a very pungent passionfruit aroma great for dry hopping.

Well ATM I only have one keg ( in use ) & as it was ready on Mon 26th it has bottled. It could have been worded better & I should have said  "rather than tie up a keg to age the stout, I would rather bottle it"  Further down the track I will be kegging stout, I have even ordered a stout tap.

you dont have to use the top screen at all  , and another thing is you dont have to even use the overflow pipe either if you have the pro screen that fits in the bottom of the mash tun.

the new gen 4s  dont even have the  over flow pipe

Yeah got rid of my overflow pipe too.

i kept  mine in the 3.1.1   for the reason of selling ( i'm thinking of keeping the 3.1.1 for double brew days)

however makes alot of difference when mashing in without the overflow pipe   as i have a huge mash paddle which makes light work rather then my small mash paddle  when i used the over flow pipe

I just bottled #2 AG Brew COOPERS SPARKLING ALE  recipe per favour by @Itinerant Peasant

When I unscrewed the lid off the FV I got a really decent whiff of hops & I was impressed with it's colour. I am looking forward to trying this one, Finished bang on 1.010.  The brewing temp ( ambient ) was pretty constant in the brew room, just perfect for Ales.

Here's hoping it will be an absolute beaut @Classic Brewing Co Phil!

did he help set the equipment profile  so all you have to  in future to select that   and it does the numbers for you
