Judging by the scum on top it looks like it might be a goner, but maybe it’s normal for Brett 🤔

In the photo it looks like pellicle. I have never tried a sour so I have no idea how they should look in the fermenter.

Cheers mate, fascinating thread, you’ve come up with some beauties! If you can approximate a Rodenback Grand Cru that’s amazing 🤩

Holy Cow, another offshoot of the main rabbit hole to go down.

Seems a “pelicule” is quite normal.

I only put 6g sugar per litre for the bottle carb, might not be enough.

I guess I won’t be tasting those anytime soon … 🤨

And yes. I have two stainless steel fvs in the lounge room that just sit in the corner for 6 months doing weird stuff on their own

Christ, I get enough grief for taking over too much of the basement 😳

Fascinating sub topic the sours. For the Guinness I brewed yesterday I put aside about 600ml of the wort to sour it later. I’ll split the batch when it comes to kegging and sour half with the wort and half with lactic acid.
Cheers for the heads up 👍

Hey Stquinta the joys of being single 🤣 my place looks like a Pub/Brewery/Bar - now tap room, the shed is full of stuff & I am still buying gear, but not for a moment am I not respecting other peoples circumstances.

Anyway build some shelves.

Cheers

Will let you know. Got a bottle of N2/CO2 blend, will be expecting a regulator in a few days. Glad I drilled the second hole through the fridge door now 😉

First fermentation was with WLP 510 (Bastogne Belgian Ale), then Brettonomyces Bruxellensis. Never tried a sour before. It actually tastes quite similar to Orval. It came in at 1.014. Hopefully it’ll bottle condition.

Yeah normal. As others have said its a pellicle. They form to protect the brew from too much oxygen getting into the brew. It won't hurt anything. The beer will be fine. I would say part of the reason you are seeing it is your doing it in plastic. Plastic will allow some oxygen into it. I've never seen one in the glass carboys which I use for my ferments.

Will be nice to hear your feedback when you get around to tasting one. Love orval. Only problem with drinking them here is they are so expensive.

Seems to be a whole new ball game the sours. It might be good to get a dedicated glass carboy for that. In general I can manage quite a long turnaround on "special" beers, if they are going to be bottled.

As for the price of Orval, I can get them for the equivalent of 5.5 - 6 AU$, which is the price in a bottle shop for special beers ( Chimay and Duvel are mainstream so quite a bit cheaper). But at the moment there is a shortage of Orval Europe-wide. When my usual bottle shop got some in lately I got a slab and a half in. The bottles are particularly good too - heavy, with a nice shape to them.

@interceptor Will this be a little bit like what the good old 4.9% Fourex used to be like maybe - think you pointed out for me a while ago that the hop flavour it used to have was as a result from Cluster hops Ceptor?

I love using big words I don’t know the meaning of.

😆

Try this one for size @Tone boy Toner:

Unterweserdampfschifffahrtsgesellschaftkapitänsmützecordel

I may have pharqued this up @Aussiekraut AK maybe you can help?

But in general it is a festive German Compound noun ; )  just like Kindergarten is but just a bit longer...

So this one is the word for the cord on the cap of the Captain of a steamship company on the Lower Weser river 😋

Haha and found this beauty on the internet haha:

Donaudampfschifffahrtselektrizitätenhauptbetriebswerkbauunterbeamtengesellschaft

which is the

Association for Subordinate Officials of the Main Maintenance Building of the Danube Steam Shipping Electrical Services

Woohoo 🥳

And then there's the festive English sentence:

Do you insinuate that I should tolerate such diabolical insubordination? 😆

(now are you serious I should be putting up with your bulllllshit - which works just as well)

Aaah language is a beautiful thing ; )

From Oz or the US is the same for me in Switzerland. I originally meant to add the hops to my malt miller order. In the end I got a separate delivery. Got ‘em now, guess I’ll be brewing 👍

I’ve got a yeast trub from a Coopers XPA in the fridge as well. For me an Australian Pale Ale is a perfect summer brew, outside of winter months I can’t really ferment lager yeasts because I can’t ramp down the temperature

First run of the Pride of Ringwood I got delivered. At 30g for a Coopers Pale Ale it’ll take me 1000g/30g x 23 litres = 766 litres before I get though the kilo 😆

The mill master is absolutely outstanding. If any of you are hesitating GO FOR IT. Took me longer to weigh out the grain than to crush it. I had to go to a specialist hardware store to get bolts to fix a plank of wood to it (next weekend’s project) but it’s a beautiful new toy so it’s worth it.

Yeah I would love one but the price is a little eye watering compared to the Chinese knock offs. I know I should support Aussie manufacturing and pleased to see that you are @stquinto, maybe a little further down the hole and I will get the Rolls Royce of grain mills, will see.

I get you on the price mate. My first mill was a waste of money but there you go. TBH I try to take into consideration where stuff is made when I buy. Not always possible or feasible price-wise.

All done - just under 5 hour brew-day. Pretty much spot-on with the OG - 1.050

I put the whole of the yeast collected from an XPA kegged last week. This’ll be my summer beer. Need to knock up the recipe of the month from a while back, the one with Philly sour yeast and fruit in it, but I haven’t got any FVs left for the time being 😳
