Pitched another batch of COPA today with some freshly spun up CCA yeast.  Ya taking notice there @Classic Brewing Co?  I spilt this yeast harvest in two and shared half with 'old mate'.  @Mickep  This is batch # 100 AG # 57 and it will be held at 17 C for two days before slowly bumping up by 1 C every day until it's at 22 C where it will be held for two days before cold crashing it.  Race you to the keg Mick ha ha.

I might be 24 hours ahead of ya.  CXPA pitched yesterday.  Currently at 17°C.  Up to 18°C tomorrow.

Today we have a Chai Latte Stout in the craft fermenter for SHMBO so that it’ll have plenty of bottle conditioning time by the time winter arrives. (Hey, I like dark beers too so it’s for me also hehe)

The yeast is Safale S-04, which I have read of stalling issues if kept too low, so starting the ferment at 19 for a couple days and will then go up to 20 for the remainder. Temp controlled.

This recipe has given me a taste for grain additions to extract brewing, will definitely be adding grains to the future brews.

Ya had better get a very wide screen computer monitor otherwise you will not be able to completely fit his smile in.

To get the beer stocks up in a hurry a simple OS Coopers Pale Ale extract with a tin of Coopers Malt wheat and 300grams of extra light dry malt. Using Kveik Voss for the first time, @BlackSands. Pitched at 25 degrees - dry sprinkle with a gentle stir 15 minutes later. Ferment at 35 degrees C.

Probably no late hop additions.

Volume 23 liters.

Good one Mick, that's what I do Mick, keep the wheel turning, the last batch I did was kegged the same day another keg blew, couldn't get any closer if I had tried.

I've only got 3 fermenters so it's a full house now. - Just gotta wait.

SMOTY Recipe

Followed the instructions this time. But due to someone asking in a thread the other week about adding extra fermentables I bought double the amount of hops.

I'm thinking that I'll put another SMOTY down when this is done, but I'll add some dextrose, or LDME or even a steep of grain.
I'll reuse the yeast from this one, so that'll leave me a couple of packets of yeast for whatever I might need it for.

i did a SMOTY on sunday!

last year i threw a saison yeast at it (just a little bit too much flavour and bite) but this year just doing it as per the recipe too. it's a tasty drop!
