BREW DAY!! WATCHA’ GOT, EH? 2022

Brew day with a Westvleteren 12 clone. Third brew with the GF40. The first two were well off with the OG or the volume. This one was much better. I ended up with an OG of 1.080 (recipe said 1.085), and I upped the candi sugar by 200g. Gunna be a long wait mind….

5 points below isn't to bad mate atleast you got a better result with the o.g

Fuggles Bitter

This recipe is loosley based on something I saw onlne, a super hoppy English Bitter.  I used to enjoy drinking a local craft brew years ago simply called "Fuggles" - I'm hoping this will end up being along the same lines:

20 litre stove top  AG:

  • 2.8kg GF Ale Malt
  • 200g GF Dark Crystal
  • 200g GF Wheat Malt
  • 100g GF Biscuit Malt
  • 20g Pacific Jade @30mins
  • 30g Fuggles @10mins
  • 70g Fggles @FO
  • Kveik Voss

I think the recipe might have been better or something. I paid much more attention to the volumes after each step. Generally more methodical. 
The brew day was only 4 hours or so, and I had time to go cut the grass and oil the garden furniture. And cook up a chook for dinner 😉

Having another crack at the Modus Operandi Russian Imperial Stout.  This time I reduced the Brew House Efficiency.  I still used 8kg of grain, which is pretty much the Grainfather's (G30) limit.  But the target volume was 20L.   I ended up with 21.5 litres at the target OG of 1.082

  • 5.25kg Gladfield Ale Malt
  • 590g Joe White Roasted Barley
  • 390g Gladfield Aurora Malt
  • 390g Gladfield Red Back Malt
  • 390g Gladfield Toffee Malt
  • 390 Flaked Barley
  • 350g Joe White Chocolate Malt
  • 31g Magnum 65 minute boil
  • 10g Columbus 65 minute boil
  • 29g East Kent Goldings 15 minute boil
  • 2 x 7g packets of Nottingham yeast
  • FG predicted 1.021
  • ABV predicted 8.0%
  • EBC predicted 123
  • IBU predicted 64

I added water salts to get me from Melbourne Water water to Imperial Stout water.

Grain hopper, the night before.  I made a carboard hopper extended ages ago.  Fits 8kg comfortably.

All grain added.  8kg is pretty much the GF limit.  During the mash, the overflow went out the holes in the side of the grain tube instead of the overflow tube.

huge grain bill  but like it  i might just pinch this recipe   and brew it up in the gen4   as it can hold upto 11kg of grain
so i have plenty of room but  i think if i brewed it in the bz 3.1.1  it will be going close to maxing out the mash tun lol

Sounds like a tops brew - what is the yeast?

Love a RIS. Mine always finish lower than that, 1.015.

I think it will finish a bit lower than 1.021.  The last one I did was great, even though it fell short at 6.7% ABV.  I am hoping this one will be better.

I am keen to try to clone a Westvleteren 12. What was your recipe @stquinto? I am having a few problems with trying to source candi syrup D-180, I have found a few other shades but not D-180 so far.

I got it from Brewfather. I only had two 180s and I needed a bit more so I threw in a 240. Black as the Devil’s doorknocker

You could mix 99 with 240 perhaps?

I’m on my phone, when I’m on the PC I’ll post the proper recipe

 I used WLP 530 in a 600ml/60g LME starter. Went off like a rocket!
