Pezzza
Not my photo... but wow fresh minced pork lightly spiced "Hackepeter" on a magnificent crusty fresh bread roll can be a beautiful thing and goes really well with a lovely Pils, Helles or Hefeweizen ; ) 2
Beers Gone Wild
Fathers Day - Tomahawk Steaks. Nearly 1KG each with bone in. Coles $25 each on special. Smoked them at 100c for approx 3 hours until internal temp was 55c - medium Rested them 20mins,Threw them on super hot grill grates with charcoal as the heat. They come out juicy, no blood, awesome smoked flavour, medium and char grilled sear/crust. To me Reverse sear to me is best steak and worth doing.. I slice them up for the plates, to get cross grain, trim excess fat and plate them. It cool to have one each but not everyone wants a ton of meat. Tasty as, smoky, charred and juicy inside. Missus done a heap of double cooked spuds and wicked salads + steamed veg. Didnt get any final shots, to busy hosting and eating.

I'd come home late after my fireman exercise and all I wanted was a cold one and some belly timber. Was duly served Any yup, took about 4 loads of the old dishwasher to clear the backlog...

It was just a microwave pack mate. Some belly lard, a Frankfurter, some pork and a bit of sausage. Any two types of Senf: French and English. I save the sweet German stuff for the white sausages I have a cuppla jars of home made Sauerkraut I need to try out, they've been fermenting away for longer than my Belgian Dubbels

BBQ'd fresh prawns (King and Tiger) - homemade Snaggers (Pork and beef) and Thai marinated Pork neck. A few tasty Thai marinated Chicken wingers. HAF Thai chilli sauce - this is a ripping sauce made by SWMBO. A few greens from the garden. 7
