Haven't brewed an American Brown for a while so... today is the day!

 

Brawny Brown (ver #3)  

  • 1.7kg Coopers OS lager
  • 1.6kg Gladfield Ale Malt
  • 300g Bairds Pale Chocolate Malt
  • 200g Gladfield Biscuit Malt
  • 200g Gladfield Medium Crystal Malt
  • 200g Gladfield Shepherds Delight Malt
  • 250g Sugar
  • 10g Kohatu @ 10 mins 
  • 10g Motueka @10 mins
  • 10g Kohatu (steep/whirlpool)
  • 10g Motueka (steep/whirlpool)
  • Mangrove Jack's M42 Yeast

Missus doesn't like my hop'd up brews so I said I will tone it down a bit for one for her. 

2kg - Ale Malt

.5kg - Munich

.1kg - Carapils 

Mash 75 mins @ 67

Boil 60 mins 

Boil 14 L

Finish 11 L

Hops 

5g - Warrior @ 60 mins - 20 ibu 

16g each Centtianial + Amarilo @ Flameout - 15 ibu

6g each dry 

With Notty Yeast. 

First milled and brewed AG, playing it pretty safe with this .. but SWMBO wants so I must deliver haha.

As an aside, you've got to make one of these with a 3:2 Enigma:Galaxy ratio one of these days ... just to tell me how it compares to a 2:1 ratio.

Well I guess I could always brew using a 2:1 Enigma:Galaxy ratio to find out for myself ... but I am very lazy.

Should be pouring by the time the red suited home invader arrives 

Easy Hefe 

2 kg Wey pale malt 

3 kg voyager winter wheat 

128 g acidulated malt 

Fwh magnum to 7 ibu 

Perle @ 5 to 18 ibu total .

Decoction mash including Ferulic rest 

Fermenting with Imperial GO1 Stefon. 

Carbing up yet another Smurtos golden ale and an all kiwi RRIPA I kegged last night. 

 

Sadly the keg I'm forcing myself to drink is still rubbish,  ferment went wrong somewhere ( phenolic , harsh and warm)  

I'd got the recipe from current state champ ( nice guy,  great brewer)  and swapped the hop combos around and really glad I'm all out of Idaho 7 and will never use it again

Chloramine has nothing to do with the mineral profile of the water. It doesn't matter what water you have, it can always be removed with Campden tablets or similar.

The mineral profile varies from location to location. You could try emailing your water supplier for a more detailed report. I did that, and they responded with the figures I was looking for. However, in the end I figured it was still pretty vague so I started making distilled water for every batch* and adding back mineral salts to achieve specific water profiles for whatever I'm brewing. It's more work but at least I know my water is the way I want it.

*My red ale is an exception to this. I've found straight tap water works best for it (chloramines removed of course).

@PaddyBrew2 I’m down south, I emailed the Water Corp and was phoned by them and got sent a link to the profile in my area. Said nothing related to minerals for brewing. 

Having said that most of your water comes from down south at the water plant near Myalup. Not much mineral content in it after it’s filtered from there.

Rain water,  RO or distilled water if you can get it are blank canvas to dial in your water. 

It does make a difference to AG  beer more than kitsbut getting rid of chlorine / chloramine is easy  ( Campden  / vit C tablets)  

There's some bloody handy spreadsheets or online calculators available

Nah I don’t, I think the water you have will be quite hard and a high ph. As far as the mineral content of that water is still unknown unless you get yours tested.

The watercorp won’t give you all the info required for you to knowingly create or change your water profile for brewing water.
