I use this dish to judge an Italian restaurant. Not too complicated but easy to mess up, and you’ll see if they have access to fresh seafood. The dish looks really great mate. I agree Mick Australian Cockles are as good as any in the world & there so many places in each state to buy them from, after all we are surrounded by water.
