In past years, at this point I would put it in the back of the cupboard for aging, but this year I think I'm just going to drink it. Put it away until the 2020 Vintage comes out. I have a sixer of the 2018 Vintage that I opened a week ago. It was good in 2018, but great in 2019. My ROTM homebrew version was so so in 2018. Shamus O'Sean Posted October 18, 2019 Share Posted October 18, 2019 Looks good @MitchellScott. It has got a good dry hop, so at least in part it is meant to be consumed in good time. Once the dry hop fades, it will benefit from that ageing. My batch has been in the fermenter for five days now. Still fermenting along. Dry hop planned for the weekend. I'm down to my last one now I have got about 10 stubbies and 12 longnecks. The longnecks were for aging, but given most of my brews since a couple of Saisons have got a diastaticus yeast infection, the longnecks will be drank early. Diastatucus symptoms have not shown up in my 2019 ESVA yet (bottled in early November), but it is not worth the risk of them slowly but surely overcarbonating.
