36 hours, no rehydration, pitch into fermenter.

 

So far the two Mangrove Jack's yeasts I have used and drunk are winners.

I will post back and let you know when I drink it.

Just pitched the yeast into this bad boy, I loved it the first time around so had to give it another whirl. Plus the Mrs keeps asking for it and its pretty hilarious watching her after a few 7%ers.

 

The Closer Saison

4000g Pilsner

450g wheat

180g caramunich

400g dextrose

 

70% efficiency

Og 1052

 

35g styrian goldings @ 60

20g saaz @10

20g saaz @ flame out

no chill

fermented with Belle Saison @ 22c

 

I highly recommend this recipe

Looks nice Michael.

 

I have just bottled a beer using this yeast. It went from 1055 to 1000 but I fermented warmer and let it rise to 28 degrees towards the end.

Just put this one down, again, with revised (ridiculous) Hop schedule.

 

Namesake Aus/Euro Larger

1.3kg Light DME

125g Dextrose

75g JWM Crystal Malt (150EBC)

 

45min PoR (10%) - 15g/Galaxy (13%) - 5g

30min PoR - 15g

20min Hallertau (4%) - 5g

15min Galaxy - 5g

10min Hallertau - 5g

5min Hallertau - 10g

 

Yeast: S189 @ 12C

 

Not sure whether to dry hop this with some Galaxy.

What yeast are you planning to ferment the brew with' date=' & also what temperature do you plan to primary ferment the beer at?

 

If you are planning to ferment the beer at a lower temperature using a lager type yeast, I personally wouldn't bother with the dry hop. If however you plan to ferment it with an ale type yeast that you are aiming to promote hop like aromas/flavours, then due to the fact that your current hop schedule includes no post boil steeping hop amounts, then in this instance I would dry hop with some Galaxy.

Forgot the yeast, S-189 @12C. I've never dry hopped a larger before but it's not a traditional recipe so...

Too much snow fall to go to work today! So I stayed home and made beer instead.biggrin

 

Today's brew was an American Wheat.

 

White Out Wheat

 

1875 g Pale Ale malt

1485 g Wheat Malt

300 g Honey Malt

250 g Rice hulls

10 g Chinook 12.4% (75mins)

20 g Cascade 5.5% (5mins)

10 g Centennial 10% (5mins)

21 L Water

WLP001 California Ale

5.2pH Stabilizer

whilfloc

Mashed @ 66C for 60mins (Lost a couple of points over the hourpinched)

OG 1.041 IBU 19ish SRM 5.5ish

2.35kg Wey Pils

1.00kg Wey Munich I

0.60kg JW Wheat

0.25kg Wey Caramunich I

 

Mash @ 68-69c aiming for OG 1.040 on the noggin.

 

90 min boil (because of the pils)

 

8g Magnum @ 60 (yeah, I finally got some Magnum)

15g Galaxy @ Whirlpool

15g Mosaic @ Whirlpool

15g Pacific Gem @ Whirlpool

5g BrewBrite @ Whirlpool

 

~31IBU

 

Ferment @ 20-22c with Wy1272

 

Dry hop with 15g each of Citra, Galaxy & Mosaic

 

Hoping for a FG ~1.015 for full body with low ABV.

 

Apologies for not posting much lately lads (and Christina), work/life balance is less than optimum, and the last thing I'm wanting to do after a day of being in front of a screen is to come home and sit in front of one.

This one hit the FV yesterday. I forgot to brew it in January. Anyway, all went well. That Bellini machine is excellent.

 

Rogers clone (based on Dr Smurto’s Light Amber Ale)

INGREDIENTS: 1.7kg pale Liquid Extract, 500gm LDM, 200gm WDM, Carapils Grain, Choc Malt Pale (Bairds), 25gm Cascade, 25gm Galaxy, Ale Yeast

 

Half Batch

(3L boil using only the dry extracts and the liquor from steeping the grain - add the kit at flameout)

 

850 g Pale Liquid Extract (15.8 EBC) Extract 60.71 % = 1/2 tin Coopers Lager (used Pale)

250 g Light Dry Malt Extract (5.9 EBC) Dry Extract 17.86 %

100 g Wheat Dry Extract (15.8 EBC) Dry Extract 7.14 %

 

75 g Carapils (Weyermann) (3.9 EBC) Grain 5.36 %

50 g Chocolate Malt, Pale (Bairds) (800.0 EBC) Grain 3.57 %

 

5.00 gm Galaxy [15.00 %] (45 min) Hops

5.00 gm Cascade [6.80 %] (15 min) Hops

5.00 gm Galaxy [15.00 %] (10 min) Hops

Looking forward to this one. I'm going to make it again in a few weeks with the lager tin i've got sitting there and split it with Ben10's ESB recipe. I'll compare the two. And tweak for an extract 21L batch in late march.

0.250kg carabohemian (steeped 2 days in the fridge)

0.200kg dry wheat extract (DWE)

 

20g Amarillo pellet (8.4%AA) @ 6 minute boil

25g " " " @ 30 minute steep < 50C

25g " " " dry hopped

 

23L @ 20C

US-05 yeast 11g

I should give it a go. I've discovered I'm not partial to the Golden Ale. Six Strings Brewery on NSW Central Coast do one i like. I do have a quiet desire to develop a Golden Ale i like.

Feeling like it's LeCoq's weekend in here. Put this one into the 2nd FV this morning :

 

Ben10 & Roo's colab

Special U.S. of Pale Bitters 11L

½ (800g) APA tin

200g Amber Malt

½ (500g) BE2 box

10min. Galaxy 15g

5min. Galaxy 20g

Dry Hop Cascade 15g

Yeast: 6g Nottingham

Predicted OG 1043 / Actual OG 1032

 

Lost about 100g of APA goo and probably should of made it to a 10L batch. I'm using brewers friend to calculate the recipes but I'm pretty sure I'm not using it well.

 

Any ideas on how to up the sugars? I was thinking i could stir 150g of Molasses and 50g of Light DME in 500ml of boiled water and add that to the FV.That would bring up the colour and Fermentables to hit the lower end of ABV for style. Thoughts?
