 Brew Temp: 20.2C

Comments: Normal Progress. Krausen almost completely collapsed, surface activity of rising bubbles still present.

 Brew Temp: 20.1C +- 0.2C since yesterday.

 Comments: Normal Progress.

Let's hope it turns out ok after all the "lead-up liquid malt hype" hey Pilot?!  Ha ha.

The young lads I helped do a 7.5% monster brew IPA with their first liquid malt (plus 2kg dry) and Coopers IPA Kit were very happy ha ha ; )

We also had a good wallop of late hop in theirs... anyway... looking forward to seeing how it all turns out. Cheers cobber. BB

  Brew Temp: 20.5C steady.

Comments: Normal Progress.

Brew 005: Saturday 13th June: 170 hours (7.08 days) since pitch.

Brew Temp: 20.0C. steady.

SG: 1015

Appearance: Muddy water, a little coudy.

Nose: Malt, breakfast cereal, light vegemite.

Palate: Vegemite, stone fruit.

Comments: Needs a few more days to mellow together. Brew 4 was similar.

Brew Temp: 20.0C. steady.

SG: Not Tested.

Comments: Will test SG and taste tomorrow.

Might even have similar colour to Brew005 !?!  Is an Ale of sorts...

Brew 005: Monday 15th June: 210 hours (8.75 days) since pitch.

Brew Temp: 20.0C. steady.

SG: 1014.25 (a smidge above 1014)

Appearance: Muddy water, no longer cloudy "white". Like beef stock now.

Nose: Malt, breakfast cereal, light vegemite, apricot.

Palate: Vegemite, stone fruit. (Apricot, peach, nectarine).

Comments: Mellowing together like brew Brew 4. SG still dropping, slowly. Brew 4 was bottled at 281/11.7 days, so I'll probably match that for consistency.

Brew Temp: 20.2C. steady.

SG: 1014

Appearance: Muddy water, no longer cloudy "white". Like beef stock now.

Nose: Malt, breakfast cereal, light vegemite, apricot.

Palate: Vegemite, stone fruit. (Apricot, peach, nectarine).

Comments: Mellowing together like brew Brew 4. SG appears steady at 1014. Brew 4 was bottled at 281/11.7 days, so I'll probably match that for consistency: bottling Thursday.

So far, it looks like the Liquid Malt behaved differently with the SG. Liquid Malt started lower but finished higher! Weaker beer!?

Yes mate quite likely "weaker" as in lower ABV but NOT "Weaker Beer"... think w 0.4% in bottle is 4.7% vs 5%...

I think I suggested a while ago whacking in another kilo of LDME as well as the Liquid Malt ha ha! 

See far below - that is a snapshot from an XL Spready that has your name on it in my old records from ages ago  ; )    

 

It would not surprise me that the Liquid Malt has less fermentables - but because of that - you have body in your beer, head and head retention benefits.

But those molecules in the Liq Malt which are less fermentable - those that remain AFTER ferment is complete - make good beer - but mean less carb-sugars being converted to Alc and CO2... so less ABV.

 

But you can crank your ABV with additional LDME in the next one... or even dirty old Dex if you like the beer as it is and just want to increase the ABV tickle...

I reckon give Brew005 a chance... and then tune the ABV later with additional dry stuff to get to exactly where you want it...

Brew Temp: 20.2C. steady.

SG: 1014

Appearance: Nice brown with hints of orange. Beef stock.

Nose: Malt, breakfast cereal, light vegemite, apricot.

Palate: Vegemite, stone fruit. (Apricot, peach, nectarine). And, FINALLY some mild nuttiness!  🙂

Comments: Finally mellowed together like brew Brew 4. SG steady at 1014. Brew 4 was bottled at 281/11.7 days, so I'll be bottling tomorrow for a fair comparison.

Brew 005: Thursday 17th June: 288 hours (12.00 days) from pitching to bottling.

Brew Temp: 20.2C. steady.

SG: 1014

Appearance: Nice brown with hints of orange. Beef stock.

Nose: Malt, porridge, light vegemite, apricot.

Palate: Vegemite, stone fruit. Orange Rind. Light nuttiness.

Comments: First 5 or so bottles REALLY fizzed up when adding the carbonation drops: never experienced that before. But then the rest of the bottles behaved normally: very weird, not sure why!

Final ABV 4.4% (3.9 + 0.5): Strange that the liquid malt behaved differently to the dry malt. BB, it must be your ‘fault’ 😘😝😂🤣

Experimentation with extra bottles was as normal, primed with Maple Syrup. My SO was keen to try Maggie Beer’s Burnt Fig Jam as a primer: so we did two bottles of that too- interested to see how the flavours transfer in the secondary ferment. 🤓

Aaaaaaaaaaargh Ha Ha that is Gold Red - naaaargh they are cheering on Brew005 which has LIQUID MALT in it - I know you are a convert maaaaaaaaaate - but there seem to be many who are lingering yet in getting on board the good ship HMAS Liquid Gold and happy to dally around in the desert of dry malt with no festive frothy top ; )

@pilotsh and Pilot mate just do as you are told and put in Liquid Malt AS WELL AS a kilo of dusty old dry malt and your low ABV woes will be gone forever ; )
