Coopers OS Lager Can 500g LDM 600g Dex. 2 pkts Saflager w-34/70 dry pitched at 20*C into 23 litres wort. Dropped to 13*C over 12 hours OG 1.037 FG 1.008 Brewed at 13*C for 7 days, then raised to 18*C for 'D Rest' until day 13. Cold crashed at 0*C until bottling on day 19. It was my first brew with temp control and I'm glad I have it. Drinking now after 21 days in PET bottles, Tastes not bad at all, but will be one of the last times I use the dextrose so heavily I think. Very happy with the carbonation and the clarity but lacking head retention, but the mouth feel is heaps better than the first brew I did which came with my FV, coopers os lager with BE1 and kit yeast. This was a glass I had yesterday, already cleared up nicely but will probably clear more in time as the yeast drops out more. Fermentation schedule 21c for the first 3 days then raise 0.5c per day till 25c and hold until done. More than likely you will need to give it a stir around 1035 ish as the 1388 tends to crap out. The other key is bottle conditioning to 3.5 volumes and leaving it in the bottle for about 4 months. So you need the heavy duty bottles. Then you will get a pretty good Duvel clone for about 10% of the cost you will pay in Dr Dans!!! Lovely bitter Grapefruit that still makes me wonder why bother with NZ hops when Cascade does the job - probably better as well. The Captain!! Posted May 25, 2018 Share Posted May 25, 2018 Finally get to have a beer today. So I’m having my latest version of my Pacific ale, with Cascade, Galaxy and Nelson. Cube hopped with about 30/40 all up of those three. Flavour is phenomenal. Great balance of hops ratios. Got a firm bitterness but not too much, maybe a little too much for style but still really nice. Malt is fairly plain bit of hint from the Munich but the wheat thins it out just enough. All in all, happy with it. Next version I’ll hold back a little more on the bitterness by 5 IBUs, this is meant to be around 18/20, I think this is more around the 25 mark. I love a pale ale where it all comes together, when you need to think about each element because they are so balanced it’s hard to pick each part they are playing.
