I agree, I have a Chargriller Kamodo Smoker that would have done a great job with charcoal but it was too cold outside last night.

When you say bacon bones, do you mean smoked hocks? My wife makes pea and ham with a couple of smoked hocks..........bloody delicious.

I do use hocks but this was 500gm of smoked bacon bones, you end up with less meat content but the flavour is awesome. 

At times I use both.
