Gribby
I'm just worried with the new coopers fermenter, that it's not air tight?

You will be fine with the Coopers fermenter. My ales sit in it for around 14 days. Lagers around 21 days. There is even folks on here who just put a piece of sticky tape over the air lock hole on their "air tight" fermenters.

Brauhaus Fritz
After my surgery I wasn't allowed to lift anything, so my Munich Helles was 47 days in the fermenter (temperature controlled, 15C). It is tasting just fine

Marty_G
Just to clarify: They may say to leave in fermenter for 14 days but the ferment will be over in 4-6 days. The other time the beer will be bulk conditioning. What sort of beer are you going to brew?
Red devil 44
I do Fly in Fly out work, 2 weeks on 1 week off. ‘So I usually put a brew down 2 or 3 days before flying out, then 14 days away, then transfer probably a day or 2 after getting home, so mine sit to ferment around 18-19 days before transferring to a keg. I bought one of the wifi temp controllers so I can raise or lower temps whilst away, works great and can have it Cold Crashing for a few days before getting home. As long as it’s in a controlled environment (brew fridge) there’s no problems.

Hey RD, maybe if you ask them nicely, they could change it to 1 week on 2 weeks off - give you more time for brewing & such

There used to be a fantastic restaurant on the Espy on the mainland too - The Watermark. Served a great seafood platter and an amazing range of steaks if memory serves me.
