Stickers
I made a variation of the SMOTY (without the hops) from the cooper's recipe archive last year as my first toucan not actually knowing that SMOTY stood for Shortest Month of the Year - not that it mattered of course but it was a really nice brew so this year i'm going to do it properly. Coopers Pale ale can, Coopers Dark ale can. Both yeasts. East kent golding hops. Brew it in February (the shortest month in terms of days) to drink in June (the shortest month in terms of daylight). Anyone else got this on their February to brew list? SMOTY Ale.pdf
jamiek86
great idea but if I was going to use extra resources to do a toucan knowing from experience. My personal taste would be to add a little more malt and maby dextrose to boost up abv and balance out the bitterness and and add all hops for flavour no 15 min boil. Just my preference looks good although I was almost going to do dark ale and OS lager tin as my next toucan but this looks heaps better.
Shamus O'Sean
I did the SMOTY brew in 2019, but it was July, not February. I do not have tasting notes from them but I remember it to be a nice beer. Something in Porter territory. I would make it again, but there are so many other new recipes out there that I am still to try.
Classic Brewing Co
I like the look of it too, reminds me of the last Toucan I did with 1xCoopersDark Ale, 1xCoopers Stout, BE 3 etc, it really was great, lots of Coffee/Chocolate flavours. I bottled in Grolsch Swing Tops & it worked a treat, I might give the SMOTY a go just for the hell of it.
Classic Brewing Co
I must have done a few PET bottles of the TOUCAN as well, I haven't got anything dark at the moment so February will be it.
jamiek86
@CLASSIC I also done that 2 can years ago but only liked it young in bottle at 3 to 4 weeks. Had a mate who liked it better with age but not for me so gave him rest
Classic Brewing Co
Hi JAMIEK86, ... I still haven't worked out how you place the name with the red highlight !! I remember drinking it until it run out - about 8+ weeks, to me it was still good. So back to the drawing board. Cheers Phil

I wasn't necessarily thinking of doing it in Feb but now I know what SMOTY means maybe I will 1

Cheers Phil OG 1.044, not sure how accurate my hydrometer is. i'm doing mine at ambient temperatures, hoping to keep it 'around' 21c (probably more like 22-23 in reality)
Classic Brewing Co
OK, but when you say ambient do you mean it sits on the bench & what have you got plugged in, just curious.

Classic Brewing Co
That's good as I just bought another 30l Country Brewer FV with an airlock & I can't put it in my brew fridge as I have a 23l with ST-1000 doing it's work for a few more days, rather than wait for the fridge to be free I was wanting to get that brew going ASAP, may have to just do that. So far my experience with adding hops via steeping/dry hopping/hop tea eventually sees the hop flavour fade after maybe 6 weeks, so was wondering whether you would still get the full hop flavour after conditioning for at least 3 months. Admittedly there is quite a reasonable amount of EKG in this brew at 75g, but if you are going to set aside a few for earlier consumption it would be interesting to see how/if the flavour changes over time.
