Smashed Crabs Posted April 14, 2020 Share Posted April 14, 2020 Wanting to switch things up in my brewery I stumbled across this basic as anything Hard Seltzer recipe. Since iv been making mostly sugar based washes of late with the odd AG beer here and there I thought I might try making this next brew day. Will tweak the recipe up a bit but looks like it can be a winner for the missus who isn't a fan of a occasional frothy. Full process here - https://byo.com/article/hard-seltzer-made-easy/ Hard seltzer 5.25 gallons/20 L OG = ~1.031 FG = ~1.000 ABV = ~ 5% Neutral Base Ingredients 21 L reverse osmosis (RO) or distilled water 4.5 g gypsum (adjusts calcium concentration to 50 ppm) 1.65 kg cane sugar 11.5 g packet SafAle US-05 or other neutral yeast strain 2.5 g Yeastex 82 yeast nutrient added with yeast pitch 2.5 g diammonium phosphate (DAP) added with yeast pitch 2.5 g Yeastex 82 yeast nutrient added 36–48 hours after yeast pitch 2.5 g diammonium phosphate (DAP) added 36–48 hours after yeast pitch Flavorings 2.8 mL lime extract added after CO2 bubbling (if used) and carbonation 2.8 mL lemon extract after CO2 bubbling (if used) and carbonation 420 mL pulp-free orange juice (single-strength, not from concentrate) after CO2 bubbling (if used) and carbonation 14 g citric acid powder after CO2 bubbling (if used) and carbonation 2 Link to comment Share on other sites More sharing options...

I'm making a very primitive seltzer from ingredients I had lying around the house. 500g Dextrose 500g Cane sugar Fermenting yeast - 7g Coopers R3559 yeast left over from a tin of Brew A. I didn't use it for the beer as I used reactivated CCA yeast for that. Yeast nutrient - 7g Coopers R0007, left over from an APA tin, boiled for 15 minutes. Boiled the 1kg of sugars together with 5 litres of filtered water. Then topped FV to 11 litres with filtered water. Risky, I know but it's an experiment. FV is in the fridge waiting for the wort temp to drop into the 20s so I can pitch the yeast. Currently at 36C. It better hurry up and cool down because I have to go to work in an hour. Might have to pitch at an unfavoured higher temp. Rookie error using 5 litres of boiling water for a brew of only 11 litres. Hey, I did say it's an experiment. Thanks Phil. I've actually got two weeks off and have worked up a thirst already. I've been out the back relocating my vege patch to a sunnier position this morning but can't have a beer yet because I've got a few errands to run first. I'm certainly feeling my age at the moment. I'm not accustomed to all this digging. Hmm' it doesn't take too much to work up a thirst these days, since I have retired I have to adhere to rules : exempli gratia - Bar Opens at 3.00pm. I am usually pretty good at adhering to this as I quite often wait until 3.30-4.00pm but as we all know - Rules are made to be broken. I did that in my younger years, I started when I was in School, I remember on Saturdays we would play Pennant Golf & then I would go & play another round, I was obsessed with it & enjoyed it for many years but years of being in sales & travelling stopped all of that. One of my biggest highlights as a youngster was to caddy for Peter Thompson - as you know he won the British Open 5 times as well as many other majors. I was born in Berri & they used to have an open championship sponsored by Holden who offered a cash prize that came with ranking points & a new car for a hole in one at the par 3 15th hole in one. It used to attract pro's from all over the world & if you went in the draw they had a mystery caddy for a pro competition & I drew him, he also won the tournament. You've done well. I had to relocate my veg garden beds because I made the rookie error of placing them west of a small tree I'd planted. Currently not a problem but once the tree grows it will shade the veggie patch. Not ideal for veggies. Relocation to the east meant digging through Kikuyu grass and clearing as many rhizomes as possible to prevent them becoming part of the veggie patch soil. While not an invalid, I'm certainly not in peak physical condition.
