martycon
I am using 300 g crystal malt and 300g sugar with can of Coopers Pale Ale, for 23lt brew. How long should I steep the cracked grain, and at what temperature? At present I am putting the grain in a nylon stocking, knoted and fully immersed in 4 lt water at 70 C . It is prodded and squeezed for 10 minutes. I am pleased with the result, am sure it can get even better and more malty with better technique. Otto Von Blotto
Temp is about right, I used to leave it in there for half an hour then drain and rinse the grains, and usually boil the resultant liquid. There isn't really any need to prod and squeeze it. Soaking does the job.
ozdevil
you also dont need a high temp either 66°c it may not mean much between 66 and 70 you could even look at 64°c for steeping for 30 minutes and just boil for 5 minutes

Not boiling leads to a greater chance of infection. 2

Comes out very nice. 1
