When it's Safe to drink your brew ?

Hi

So the fermentation done after 6 days .

the day 7 i pour the beer in Drinkmate Carbonation Bottle and carbonated in 10 secunds and drink . it taste OK for me . but my question is it safe ? 

Would you do that ? and why not ?

It is certainly safe but it won't be the best tasting beer out there. Once it is carbonated, I have a few testers in the first two weeks to see how it is going but generally give it a bit of time. Nothing wrong with drinking it when it is still "green", as long as it is carbonated.

^^ What Aussie said - give it time, not for safety but if it is drinkable now it will be great in 2 - 3 weeks. Did you prime that bottle as well?

Make sure your other primed bottles are kept at 18° or above (but not more than 25°) so they get time to carbonate.

I've got five, 355ml bottles left. I pull one out now and then. Don't think I had one last year. 

My local homebrew club made a Russian Imperial Stout at a local brewery in 1996. Everyone got 19 liters. Had the last of it in 2017. Past its prime. It peaked at about 15 years. This was a 12% abv stout. 

Now that I'm 60 will I be around to enjoy another 20 year old bottle of my homebrew?

i already have beerdroid but i did not get "brewprints" because it's very hard to get that . instead i ordered 5 extract from brewferm and i'm doing "Tripel Terror" with 9.2% ABV 🙂 i can't wait to try that when it's ready
