It is great that we have so many choices in fillings for pies these days, I recently had Beef & Guinness Pie, Fish Pie (mainly Prawn & Fish with Tarragon, Leeks & Potato) Slow Cooked Lamb Shank Pie & others from a specialist bakery in my area. This one started with a home cooked tomato sauce (run out of tomato paste) then mozzarella, ham, salami, bread & butter cucumbers, anchovies, capers, mushroom, sliced mozzarella and crumbled fetta cheese. Jules made another traditional Pork Pie using all ingredients from it. She rendered down fat for lard which was used in the pastry. Used the bones to make gelatin for the jelly filling and of course the delicious meat. It's the best pie of any kind I've ever tasted in my life.
