Kennyg Posted June 30, 2023 Share Posted June 30, 2023 I would like to make a Scottish Export beer. I have made Coopers Aberdeen Scotch ale, but it is not quite the same. I have done a bit of research and found an Edinburgh ale yeast. I know that the Edinburgh brewers did use hops . In some case quiet heavily in India Pale ales. I suspect that the hops they would have used would have been English traditional style hops. However, have a think about what you feel it was missing, compared to your take on a Scottish Export Ale? If it was just missing some ABV, maybe throw in 500g of Light Dry Malt. If it was missing bitterness, perhaps do a 15 minute boil of some East Kent Golding hops. If it was missing caramel flavour, a hot steep of 300g of Crystal Malt would help. 2 Link to comment Share on other sites More sharing options...

davids47 Posted June 30, 2023 Share Posted June 30, 2023 I have read that take about 3 or 4 LT for your wart and boil it down to make to more caramel then add that to your brew, ( i think that was to make the old fashion Youngers export which was quite sweet ,mind you it was 50 years ago when i last had it ) Link to comment Share on other sites More sharing options...
