Can anyone suggest what has happened and how to avoid it in the furture? I brewed a coopers Mexican Cerveza and it has finished with a colour not to dissimilar to the contents of the original can extracts????

Water, Yeast (came with Product) and dextrose. fermented in a 30l plastic fermenter

Next time check the use by date. Liquid extract gets darker as it ages, so the fresher kits will be a lighter colour.

Well, I have no clue as to why it came out dark, for a Lager.

It may have been an older Can.

Storing the can at a higher temperature accelerates the maillard effect, making the colour darken a bit faster. I wouldn't worry too much though. As long as the yeast isn't affected. I always chuck my yeast sachets directly in the fridge. Better there than under the lid.
