Vienna Lager

I'm planning on making a Vienna Lager on the weekend. I've been doing some digging and came up with this:

3.5kg Vienna
1.5kg Munich
250g Cara Munich II
50g Chocolate Wheat
50g Hallertauer mf (4.0%AA) @ 60 
30g Tettnanger (3.4%AA) @ 10 (alternatively, 10g @ 60, not sure yet)
2 x NovaLager yeast

75 minute mash @ 66.7C (medium body) and 60 minute boil.

22.9 IBU, 21.1 EBC, 5.3% ABV

Any objections?

Not really, but

  • Any other lager yeast I would say 2 packets, but I do not know much about NovaLager yeast.  I have not used it yet.
  • 75 minute mash.  Really? Is that long necessary.  However, most of my mashes are 60 minutes.  Plus I pause the timer and stir the mash about 3 times.  This takes about 4 minutes each time.  So 60 minutes + 3 x 4 minutes = 72 minutes is not far off you proposed 75 minutes, so go for it.

No real reason to change your recipe.  I think it will be a cracker.

Yeah, that's where I got my info from, and can confirm it does what it says on the tin.
