Phil_McGlass Posted September 25, 2017 Share Posted September 25, 2017 Be aware that Belle Saison gets down to 1.002 ish. It can even get to 1.000. So you will end up with a significantly higher ABV than normal unless you reduce the fermentables. When I used it I did a partial mash and I felt it improved with time in the bottle, and it was fruity and spicy but I wouldn't say funky.
