Adz Posted January 31, 2014 Share Posted January 31, 2014 Hi All, 1.7kg TC Wheat 1.5kg Coopers Light LME or Wheat LME 0.5kg Wheat DME or just normal Coopers DME 10g coriander seeds 20g orange peel 2.5L hop boil EKG 15g @ 15 mins EKG 15g @ 5 min Saaz 5g dry hop Wyeast 3944 I would like to get this as close to this style as possible - Hoegaarden etc. I was thinking of adding unmalted wheat joe white along with some kind of crystal wheat for the enzymes to get a mini mash going. Hairy Posted January 31, 2014 Share Posted January 31, 2014 Ben is correct in that crystal doesn't have the enzymes to convert. You will need to mash the unmalted wheat with a base malt. You could use wheat malt with it but it may get a bit gluggy with only wheat. Maybe use some ale or pilsner malt with it. Link to comment Share on other sites More sharing options...

Looking at coopers forum and google... looks like its difficult to get anything ideally close to this style using just extracts. I've decided due to time and money contraints to go for basic recipe: TC Wheat, Light LME, coriander, orange peel, ekg hops, little bit of saaz etc. Hopefully the 50/50 wheat/other malt, hop profiles and witbier spices can get within ballpark. I need help on a yeast choice: I have 3 suitable yeasts available for this: Mangrove Js M20 Bavarian Wheat Wb-06 S-33 Would S-33 suit ? Could I use a combo of M20 and s33 together ? I want that slight smoothiness and creaminess as well as better head retention. But as I'm doing an extract/partial mash how can I achieve that? I'll give this a crack! 1.7kg TC Wheat 600g Unmalted Wheat 400g Malted Wheat 1kg Pilsner Malt Handful of oats (Optional) Mash @ 64C Saaz 15g@ 15 mins Saaz 10g@ 5 mins 5g Crushed coriander seed @ 5 mins 5g Dried orange peel @ 5 mins 3944 Yeast I may dry hop with some EKG as well.
