phAT YAK
I was lucky enough to purchase several kilos of caramunich 3, crystal light & carapils + 1 kilo each of NZ Pacifica & bullion pellet hops extremely cheap. So my question is can anyone throw up a brew that may suit these ingredients?
King Ruddager
You're in luck - I've also been using caramunich like it's going out of fashion lately. See this thread. Originally I bought it for a wheat beer - something a bit different.

Hairy
Several kilos of specialty malt should last you a long time. The carapils you can pretty much use in any recipe. Using 200-300g will add body and aid with head retention but it doesn't add any flavour or colour. Light crystal is also very versatile and can be used in most brews. The Caramunich III is a dark crystal that is a little maltier than normal dark crystal. Just use it as a replacement for dark crystal if any recipe calls for it. Sorry, no recipes but I hope this helps a little. I can't really help too much with the hops. Is NZ Pacifica the new name for NZ Hallertau? Reuben
Use the Pacifica late in the boil for an orange marmalade taste and aroma. This NZ IPA uses a big whack of late addition Pacifica along with Nelson Sauvin and Motueka hops. It's intensely fruity and very tasty! http://yeastieboys.posterous.com/private/yCmgJxeHrs
phAT YAK
Thanks guys! Will try anything twice, just to be sure I either stuffed it up or got it right & if it tastes s#?t the second time round I won't do it again. I'm pretty sure that the NZ Pacifica = pacific gem and is a good replacement hop for bullion
Hairy
I'm pretty sure that the NZ Pacifica = pacific gem They are two different hops - links below: Pacifica Hops and Pacific Gem This may give you some idea on how to use the Pacifica.
