AshS1 Posted March 21, 2012 Share Posted March 21, 2012 Hi all,just done my first Coopers Wheat Beer kit ! Followed the instructions down to the letter and all went well. Day 1 (saturday) Mixed the 500g of light spray malt and 300g of sugar with hot water added the can topped up with cold water to the right temp 22degrees,took barometer reading 1035 added the yeast,all well. Day 2 Got up and noticed the fermentation had gone mad over night,remnants of which could clearly be seen well over half way up the Krausen collar. Day 3 Slight bubbling but nothing to write home about.Temp constant at 22 degrees. Day 4,today. All fermentation and action stopped ? Barometer reading 1010. Have I done anything wrong? All seemed over really quickly and low alcohol content. Beer smells and tastes OK,very lively when testing in the Barometer tube. Would love to know if I've done something wrong or that's just how it should be. Thanks in advance and any of your help very much appreciated.[biggrin] ASH. Hairy Posted March 21, 2012 Share Posted March 21, 2012 Welcome to the forum AshS1! All seems to be fine. Assuming you filled to 23 litres, I would expect FG to be around 1007. So it may not be finished yet. The alcohol content is affected by the fermentables you put in and the attenuation of the yeast. Based on what you added I would expect an ABV of a touch over 4%. Anyway, just relax and give it more time and it will be fine. BTW - there is no need to measure atmospheric pressure so use a hydrometer instead of a barometer [biggrin] Link to comment Share on other sites More sharing options...

My last wheatbeer was the exact same and done with the recommended kit ingredients too 300gdextrose + 500 dried malt+ kit to 23 l 00 hours - 1.035 - temp 26 24 hours - 1.017 - temp 24 48 hours - 1.012 - temp 24 72 hours - 1.010 - temp 24 4 days - 1.010 - temp 24 5 days - 1.010 - temp 24 6 days - 1.0095- temp 24 7 days - 1.0095- temp 24 in the first day it fermented violently just like yours. ended up at about 4%, tasted fantastic. The joy i find in seeing my beer brew only compares to family and friends. Although the recipe tend to stick to i document the changes start to end. my trial jar is of the finest glass i adored it since it came through my door if you don't like it you can kiss my ass but it will some day end up on the floor. The hydrometer is quite accurate at telling me how drunk i'm sure to be. i do not think that it has been wrong yet and i am sure that it also loves me. I like beer so very much, it makes me want to touch, pretty much anything that is brewed even when i'm not in the mood. A few moons back I started to make my own it's lead me to write this poem. I just cracked a Fruit Salad Ale, which stirred something deep in this male. Which beer will I next make? So many choices it makes my heart ache. A German Hefe is next to come, An American Steam beer when that's done. An IPA topped with yummy hops A Christmas Ale you won't find in the shops! Perfect colour,good head retention and by the feels of things not bad alcohol content. Just doesn't taste of much ? A bit wishy washy ? Is there anything I can add next time to improve the flavor of the finished brew? Hairy Posted March 29, 2012 Share Posted March 29, 2012 The flavours in wheat beer tend to come from the yeast. Next time try replacing the LDM with Wheat Malt and maybe up it to 1kg. Add some hops if you want, like Hallertau, but wheat beers generally aren't very hoppy. But get yourself a good wheat beer yeast. Brewing these yeasts at different temperatures will produce different flavours. Do a bit of research on Wheat Beer yeasts and it may make a big difference to your next beer.
