So I'm guessing the carafa l malt is what gives this beer the dark colour? not as dark as say chocolate malt for a stout?

Spot on UoB.  Carafa I is less dark than most Chocolate Malts.  Stouts also get a lot of their colour from Roasted Barley.

Thanks mate I done a bit of research but because of old ways vs new different ways there was a lot of different answers.

Apparently Swartzbier sometimes uses roasted barley for the spicy part. A Dunkel will not.
