ChristinaS1 Posted June 27, 2019 Share Posted June 27, 2019 (edited) Are you talking about a fruit cider kit? Or are you fermenting juice from the grocery store? The sugars in fruit juice are completely fermentable, so they ferment to dryness. Because of their natural acidity, once the sugar is gone, they can taste quite tart. They taste best with a little sweetness added back to balance the adicity. There are two ways to do this. The first way is to add non-fermentable sweetener, which allows you to carbonate the cider; a lot of kits come with sweeteners. The second way, which I prefer, is to add a little "wine conditioner" at bottling time, which is a sugar syrup that contains sulphite and potassium sorbate, to prevent the yeast from fermenting the sugar syrup.
