Smuwahmb Posted June 30, 2013 Share Posted June 30, 2013 Hi Guys, I\u2019m looking at doing the Coopers Heritage Lager as my next brew and was after some help with a hop schedule. The recipe online is Can of Thomas Coopers Heritage Lager Can of Thomas Coopers Light Malt For the yeast I have some Saflager S-23 and W34/70. I will probably go with the S-23 at 11-12 degrees? For the hops I was looking at using Sorachi Ace 20g 45mins 10g 20mins 10g 10mins 10g 0mins And probably dry hopping with another 20g? I do however have a freezer full of hops at the moment that I need to start using up and am keen to hear some suggestions as to what would work with the Sorachi Ace or in its place? I currently have Motueka Topaz Perle Mosaic Galaxy Nelson Amarillo Simcoe Chinook Summer Saaz Czech Saaz Cascade English Kent Golding Fuggles Pride Of Ringwood Any help or suggestions would be greatly appreciated. Hairy Posted June 30, 2013 Share Posted June 30, 2013 I haven't used Sorachi Ace before but it is quite high in alpha acids (around 13%). 20g @ 45 minutes will deliver a fair amount of bitterness on top of the bittered kit. Smuwahmb Posted June 30, 2013 Author Share Posted June 30, 2013 While I don't want to go and over bitter it, I do like my beer quite hoppy and I have found with some of the other recipes I have done that use a kit plus a can of LME have come out a touch sweet for my liking. I haven't used the Heritage Lager kit or Sorachi Ace before either so I am open to a whole revamp of that hop schedule if need be? Link to comment Share on other sites More sharing options...

I have also not used the Heritage Lager but would assume it is a light styled beer with Pilsener malt. I would just be concerned about over bittering a light kit without the malt backbone to support it. But then again it may be fine. Link to comment Share on other sites More sharing options...
