McFrankel
I know that many people put a wedge of lime with their mex cev. I was wondering has anyone considered making up a mex cev with lemon myrtle in it? [happy]
PB2
It would probably go okay. Currently have my lemon myrtle witbier on tap and it is stunning [love] Start with about 6 leaves chopped finely and infused for 20mins or so.
McFrankel
Thanks Paul [biggrin] is it worthwhile putting in a hops or just be2, mex cev and the lemon myrtle?
PB2
I used a little Saaz, which I think complements the lemon but it's not necessary with Mexican Cerveza. [biggrin]
stephenw5
Can you put a little lime juice in the bottle when you bottle it so you don't have to worry about it when you go to drink it?? If so how much would you suggest? Or would it be better to add it to the fermenter?
stephenw5
Would using kaffir lime leaves infused for 20mins or so work well?
PB2
Hey Stephen, try it and let us know how the beer turns out. Make sure to hit the leaves with very hot water to kill off any organisms residing [bandit]
Matty A
Hi Paul, was just speaking to a fella at a homebrew shop and he said that when he makes a Mex Cav or Corona style beer he cuts a lime in half and squeezes the juice into the wort before he puts the yeast in. He also dumps the lime that he cut in half in the wort. Does that sound right. I would have assumed you would have to boil the lime first or put the juice and lime in boiling water before putting into the wort. He also has some saaz, how much and how would I go about adding that. Wow what alot of questions, i am just a little excited to try this [joyful]
PB2
Yes, if you are going to do this you should pastuerise the zest first. Perhaps, make a hop infusion (15g to 20g) and add to the wort.
McFrankel
There seems lots you can do to pre-flavour the mex cev. I will start experimenting this weekend. [innocent]
JohnS12
The way to do this is to brew 1 can of coopers and 1 can of morgans cerveza together with out any sugar at all, this will give you the lemon taste that you are after.
