PB2 Posted February 3, 2010 Share Posted February 3, 2010 Luke, is that 2 x 11.5g of S-23? If so, you may be underpitching for a 10C ferment. The S-23 spec sheet suggested pitching rates are: 0.8 - 1.2 g/l if fermenting at 12C - 15C 2 - 3 g/l if fermenting at 9C - <12C Link to comment Share on other sites More sharing options...
Luke Posted February 3, 2010 Author Share Posted February 3, 2010 Yep, 2x11.5g S-23. I was going by Mr. Malty's pitching rate calculator, which said 1.7 packs of dry yeast in 21lt wort. (But it doesn't take into account the wort temp.) I'm not doing a diacetyl rest, so this is a bit of an experiment!!! The ferment is going really strong though, it took about 2 days to show signs of fermentation, but now it's got a 5cm foam head on it so I'll leave it til it's done and keg it and lager it for 4 weeks.
