Kai
I was wondering if you could possibly tell me the IBU's on the vintage ale? I'm looking at doing a clone with a slight twist, and while I have a tentative grain bill worked out I'm not sure how bitter to make it. Kai
Trade secret on those IBU's? That's fine if it's the case... I'll just base the hops on what'll balance my malt, though dare I say it I might have to use something other than POR past 25.

PB2
The bitterness of our Extra Strong Vintage Ale has varied from batch to batch. So as you suggested Kai, the best idea is to go for a level of bitterness that will balance the malt.
