el-Lance-o Posted October 5, 2012 Share Posted October 5, 2012 Hey Guys Long time reader, first time poster (woah cliche) I haven't been in the game long, in fact, my first brew is still conditioning in the bottles. So while the FV is dormant, I might as well get onto the next batch. I bought the ingredients for the Parity American Amber Ale: 1.7kg Thomas Coopers Traditional Draught Beer kit 1.5kg Thomas Coopers Amber Malt 30g Cascade Hop Pellets 15g American Ale Yeast (US-05) or kit yeast The problem was the shop I visited didn't have US-05, instead I bought the Safale S-04 as recommended by the guy who was behind the counter. Now after reading up on the S-04, I found that it might not be a good yeast to use with an amber ale. I was hoping someone might have some advise or experience using such yeast with an amber ale or if I would be better off going and getting the US-05 or even using the kit yeast. Hairy Posted October 5, 2012 Share Posted October 5, 2012 Welcome to the forum Lance. S-04 will be fine. It is an English ale yeast and a bit fruitier then the US-05 which is fairly neutral. In the end you will be making an English Amber Ale with American hops. A bit like playing cricket and allowing 'chucking'.
