From what I can see the us-05 will make it Hefeweizen, and higher fermenting temperatures will make the banana flavor with this yeast. Does anyone know the best temperature for this result? If so, I've read that it doesn't throw much banana flavour. But I think its the warmer temps produce the banana flavour. Link to comment Share on other sites More sharing options...

I'm brewing a wheat right now with it and after one week in FV at 18\xb0 it's giving out quite a bit. Not sure if it'll lose much over the next 2 weeks in there but that's what I'm getting right now.
