An old stubby holder cut to create a flat side is a good insulator as well as duct tape, just keep it away from the heat belt so that you get a more accurate reading.

The heat belt is best placed in the centre of the fermenter.

I tape the sensor to the FV then tape the stubby holder over the sensor.

Yeah, a little bit of duck tape to hold it in place & then whack the stubby holder over it & tape the edges to make a little warm bed for the sucker.

That is an old photo when I was finishing one off at ambient, I can't find the photo with the stubby holder, but this is the same principle.
