DaleB
Havent tasted it yet, but I will be trying it a bit later today, I know the fermentation is complete, however I wanted to give it a few more days to clean up as I was using the S-04 yeast. Not quite sure if its an infection or not, but they are not just bubbles some are white floating pieces that almost look solid, mind you it smells great. Kearnage
Having recently experienced my first infected brew - it doesn't smell great [sick] It was eye watering to smell, and truly horrible to drink. I got a second opinion from the other half - she didn't speak to me for a day after tasting it. That's a long way of suggesting that if it smells (and also tastes) good it's almost certainly not infected [biggrin]
DaleB
Ok. Well Its finished fermenting at 1010, its crystal clear and wow it tastes amazing, I could drink it now, no taste of yeast. Its perfect. Will cool it down for a few days then bottle it. Cheers
Matty A
Just bottle it Dale. Cooling it down will only slow the secondary fermentation process if it is fairly clear.
