Frankie4Fingers Posted June 17, 2021 Share Posted June 17, 2021 Hi all Having had a slight recipe fail with my first go at the Red IPA ROTM due to not being able to hold on to my extract, I am gathering the ingredients to give it another go. The recipe states I need 100g of Carafa L Malt. My LHBS has 3 different types of Weyermann Carafa each with ever so slightly different characteristics. All 3 have the following description - The husks of the grains are removed prior to malting and roasting. This reduces astringency and bitterness, while adding coffee-brown colour, a coffee-like bouquet, dark beer aroma, as well as body and mouthfeel to finished beer without introducing harsh flavours. Even small amounts of CARAFA SPECIAL® malts in the grain bill produce dark beers of unusual smoothness and mildness with a firm, creamy, white head. Type 1 Specs are:- Colour 800-1000 EBC Type 2 Specs are:- Colour 1100-1200 EBC Type 3 Specs are:- Colour 1300-1500EBC My question is what would the majority go with given the three choices......or would it make minimal difference in terms of flavour but just affect the colour with 1 being the lighter of the three?
