Canadjian
Can anyone tell me if it is possible to carbonate the beer or do you have to use the sugar?
Hashie
You can carbonate with CO2, provided you are kegging or you have another suitable pressure vessel to carbonate the beer in and then transfer to bottles.
kieran
Yep, what Hashie said. Sugar kicks the yeast back into action, makes a tiny amount of alcool, and the rest is your CO2. Kegs are about the only way to do it otherwise. You can get a Tap-a-Draft system, which are little 6 litre mini-PET kegs with a little CO2 cream type bottle on the front which gasses it on the way through. You chuck the whole thing in the fridge. http://www.grainandgrape.com.au/brewingsystems_info.htm

Canadjian
I have been trying to think of a way to gas my tallies, obviously, and I thought why not try using a soda stream soft drink carbonator to gas my beers. I know why not now. I went to take the soda stream bottle out after gassing the brew and the bottle blew off. While blowing off it shot a heap of beer onto the roof and the rest onto me. Anyway I have decided to stick to the traditional method and will just wait til I can set up my keg system.
