I want to get some bitterness and fruitiness. when is the best time to add hops during brewing? I've been told adding hops early gets the bitterness and late for nose and fruit? Canadian Eh!L Posted November 7, 2011 Share Posted November 7, 2011 Hi Dean, I'd give it 20mins. This seems to give the brew a little bitterness/flavour /aroma. If you are looking for more bitterness go for 30mins or if you are going for more aroma go 5mins to flame-out or even dry hop.
