American Amber Ale 1.5 kg Liquid Amber Malt 1.9 kg LDME Golden Briess 250g Crystal 70 100g Chocolate Malt 15g Magnum 12.2% 60 mins 10g Columbus(tomahawk) 14.6% 10 mins 15g Cascade 5.5% 10 mins Stove top boil (10L) steep Crystal and Choc, strain add to boil pot add 1.5kg Amber malt top up to 10L Boil with Magnum 60 mins, add other hops at 10mins Cool, top to 23L in FV Safale US05 Might dry hop or add flameout hops... Magnum seems low but that's what beersmith is telling me, saying that I'm no expert at Beersmith. They are the only hops I have at the moment, but I have plenty of them (pellets). I haven't aimed specifically at an Amber before, I love hoppy beers, but I'm a little scared of overdoing the columbus at 14.6%, I also don't want to have to wait months for flavours to settle down to drink it. jasond4 Posted June 29, 2012 Share Posted June 29, 2012 I like it but I would drop the chocolate malt. I find it makes it too much of a brown ale. The amber and the golden malt together give a great colour on their own IMO, and the sweetness of the malts should balance out the bitterness. Thats my two cents.
