Try halving the priming rate for your stouts, and it should help getting smaller bubbles for a creamier head. Longer time in the bottle also helps make the head tighter. However, to get the creamier head in a stout then you won't achieve this exactly unless you prime it with a Nitrogen/Oxygen gas mix. More time in the bottle will give smaller bubbles and a better head and some specialty grain will provide you with a nice tight packed head too.
