WaynoW
Hey Guys, Just about to do a Toucan Stout and was wondering what the best pitch and ferment Temp would be? (I am heeding Paul's advice and only pitching 15lt until the foam subsides, then topping up to 23) Thanks Wayne
Muddy Waters
Wayno - Personally I would ferment at 18c and pitch anywhere between 18 & 22C.
AnthonyR1525228508
I did two toucan brews in a row back in Feb/Mar this year when it is still very hot in Sydney. Pitching temp was 28C and brewing temps ranged in the mid to high 20s. 6 months later they are sensational. If you have the new DIY brew kit, don't worry about starting with 15l. The krausen kollar kan kope. Just brew to 23l.
