PaulF12 Posted February 25, 2011 Share Posted February 25, 2011 Did a straight can recipe for non-alcoholic (2 hour ferment) brew of Cooper's ginger beer. Week two in the bottle and a lot of the bottles are developing a thick but clear fluid or layer floating at the top. Pours and float in the glass as well. Carbonation is great.. Tastes fine. But What Is This Layer? Tested 3 bottles now, 2 have had it and one of those also had some darker spots floating. - Used Melbourne tap water. - Corn sugar - Stirred the barrel a lot as we were filling bottles (possible cause being underdeveloped yeast carrying through to bottles?) - Plastic beer bottles (screw tops) Should I be concerned? Muddy Waters Posted February 25, 2011 Share Posted February 25, 2011 Ginger beer tends to get a "scum" ring at the top of the bottles. Inverting them after 1-2 weeks in the bottle should dislodge it somewhat (otherwise it is sometimes a little hard to clean it off if you plan to re-use the bottles).
