Greenyinthewestofsydney
Bottling time for my lambic. 12 months in the fermenter. Gravity just a touch below 1.000. Id call it 0.999. pH stayed at 3.4 which i thought was interesting. I thought it would get lower than that post my last test in October. Anyway the uncarbonated taste is very nice. A little more funk than the last one. The sour is there but its not puckering type sour. More a mild sour. I like it judging on the sample. See how it goes when it carbs up. Kept half the slurry and have a brett starter i made a few weeks ago and two packs of coopers yeast to throw in to the next one which i want to make tomorrow. On a side note. I hate bottling but bottling or should i say siphoning out of a glass carboy has to be the most painful job in home brewing.
