Cooper's True Aussie Bitter and daul yeast

Recommended Posts

Hello all, quick question regarding recipes that use a low fermentation temp with daul yeast packets.

So I'm doing the Coopers True Aussie Bitter recipe, which uses both the Canadian blonde kit yeast and a proper larger yeast. The recipe says to brew at 13 deg - not issue here. Question is, the kit says the kit yeast works in the typical kit range of 21-27deg, so how does this yeast work when at 13deg as stated in the recipe?

The specialist larger yeast (34/70) is fine at 13deg but why use the kit yeast as well when the temp is well and truly outside of its operating range? Won't the kit yeast just go dormit until conditioning in bottles?

Recipe for reference is here https://www.diybeer.com/au/recipe/true-aussie-bitter.html

Thanks

I think the Kit Yeast, if it's the one in the Gold Packet, is a bit more of a broad spectrum yeast "mixture" as far a its temperature range goes.

The reason I say this is because I brewed a Coopers Lager in November just using the kit yeast, at 12C.

It did nothing for three days then took off.

It's in lagering fridge now hopefully ready about mid Summer.
