RonaldW2
Don't you just love it when you aren't wearing your glasses when reading the hydrometer? I have just put down a Australian Pale. I was aiming for around the 1.042 but looked at it to read 1.035 so I added more dextrose, gave it a good stir took another reading and it is 1.055. How well it will be a strong pale of around 5.6% kegged.
Beeblebrox
Nothing wrong with that! Having said that, with extra dex, it may be a bit light on flavour, so I'd be inclined to throw in some dry hops on day 3 just to give it a bit of a flavour kick, maybe some Citra, Cascade, or Centennial? Or all of them if you're game!
RonaldW2
I have no problems with that either. What I am drinking is around 5.8% anyway. I was only going to add 750gm of dex and 500gm of DLME but I added the hole 1kg of dex, so there should be ok. I was not going to add hope to this brew as I am going to harvest the yeast, S-04, afterwards and I have read somewhere that hops stress the yeast. I could always put the beer over to another FV and add hops later or into a keg for a few days I guess.
