WaynoW Posted August 28, 2011 Share Posted August 28, 2011 G'day all, I have a can of Coopers Dark Ale sitting around, time to make it up I think. I have a box of BE2, 500gms of Coopers LDM too. Also have a couple hundred gms of Flaked Barley I'd like to use. I have some spare Molasses aswell. Not considering using all these ingredients!! LeonardC2 Posted August 31, 2011 Share Posted August 31, 2011 Well,when I was making my whiskely recipe,the base beer was a cooper's dark ale; 1 can cooper's OS dark ale 3lb (1.362kg) Munton's plain amber DME 1oz (28.35g)Kent Golding 1oz (28.35g) German Haulertauer Brewed to 23L Re-hydrate yeast in 1.5C luke warm water with 2tsp dextrose dissolved That gives a nice dark ale with a ruby glow to it. GrahamB2 Posted August 31, 2011 Share Posted August 31, 2011 Try adding some cracked roasted pearl barley. I did this last year and the result was very good. Roast, say 100-150g, of the pearl barley in the oven until dark brown (try not to burn). Then crack the cooled grains and simmer in 500mL of water for 20 minutes or so. Strain, cool and add to your brew. Worked a treat for me. PS: Kit recipe was 1.7kg Coopers Dark Ale 500g Coopers Dark Ale 500g LDME 100g Cracked Roasted Pearl Barley Coopers Cultivated Yeast Simmer the cracked roasted barley for 30 minutes and strain.
