Ingredient question(s)

A few ingredient questions, have googled them all but you're all a much better resource! Welcome any thoughts...

- What is the difference between caramunich and crystal grains (is caramunich designed for lighter coloured beers, and crystal an allrounder suited for darker coloured/sweeten more bitter beers?)

- Difference between regular LDM (band dried) and LDM (spray)? Is it a different method which produces different quality - my spray malt (light) says premium (EBC 12 AV 8 - don't know what that means [pinched])?

- What are the qualities of dark brown sugar re home brews - used in scotch ale and english bitter and loved the results. Is it best used in darker/heavier ales only? Use opposed to regular sugars/dex?
